Step 1: Heat oil in a large non-stick frying pan over medium-high heat and add onion, celery and carrot and cook, stirring occasionally, for 5 minutes or until softening.
Step 2: Add pork mince and garlic and cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until mince changes colour and them stir in tomato paste and cook for 1 minute and then stir in passata and bay leaves and bring to the boil and then reduce heat, cover and simmer stirring occasionally for 45 minutes.
Step 3: Uncover and simmer until sauce thicken slightly and season with sate and pepper to taste.
Step 4: Meanwhile, cook spaghetti in a large saucepan of boiling water following packet directions or until al dente.
Step 5: Drain spaghetti and toss the spaghetti through the Bolognese sauce and sprinkle with parmesan and basil leaves and serve.
