Ingredients

The ingredients are:
  • 2 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 1 celery stick, finely chopped
  • 1 carrot, finely chopped (large carrot, peeled)
  • 500 grams ground pork (mince)
  • 2 garlic cloves, finely chopped
  • 1 tablespoon tomato paste
  • 1 jar (750 gram) tomato passata (sauce)
  • 2 bay leaves
  • 1/4 cup basil, chopped (leaves)
  • 400 grams dry spaghetti
  • TO SERVE
  • Parmesan, grated to serve
  • Basil leaves, to serve

How to Make

  • Step 1: Heat oil in a large non-stick frying pan over medium-high heat and add onion, celery and carrot and cook, stirring occasionally, for 5 minutes or until softening.

  • Step 2: Add pork mince and garlic and cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until mince changes colour and them stir in tomato paste and cook for 1 minute and then stir in passata and bay leaves and bring to the boil and then reduce heat, cover and simmer stirring occasionally for 45 minutes.

  • Step 3: Uncover and simmer until sauce thicken slightly and season with sate and pepper to taste.

  • Step 4: Meanwhile, cook spaghetti in a large saucepan of boiling water following packet directions or until al dente.

  • Step 5: Drain spaghetti and toss the spaghetti through the Bolognese sauce and sprinkle with parmesan and basil leaves and serve.
