Step 1: In a large bowl, put in beans cover with enough water to go about 2 inches above the beans.
Step 2: Cover, set aside to soak overnight - or at least 8 hours. Drain and rinse beans.
Step 3: In a large pot put beans, ham hock, salt and water. Simmer for three hours.
Step 4: Add the rest of the ingredients and simmer for an hour longer.
