  • 3/4 cup corn kernels (cooked)
  • 3/4 cup Lima beans (cooked)
  • 1 can (4 ounce) green chiles (chopped)
  • Salt (to taste)
  • FOR SAUCE
  • 1 bell pepper (seeded minced)
  • 1/4 cup water
  • 1 yellow onion (small onion, minced)
  • 1/2 cup tomato puree
  • Salt and pepper (to taste)
  • 1/2 teaspoon dried thyme
  • 1 1/2 teaspoon jalapeno sauce (La Victoria brand)

How to Make

  • Step 1: Make the sauce first by combining the sauce ingredients in a sauce pan and simmering at medium-high heat for 10 minutes. Set aside and allow to cool before serving.

  • Step 2: Start the filling mixture by sauteing the chorizo sausage in a skillet, crumbling it as it cooks until it is fully crisp. Add the corn, Lima beans, green peppers and salt. Mix well and saute for 5 minutes so the mixture gets hot.
