Ingredients

The ingredients are:
  • 720 grams boneless skinless chicken breast (schnitzel steaks, 4 x 120 grams)
  • 1 packet (80 grams) cheese (herb and garlic cheese, at room temperature)
  • 1 bunch (160 grams) asparagus, trimmed (1 bunch thin asparagus)
  • Salt, to taste
  • Pepper, to taste
  • 8 slices (200 grams) prosciutto ham
  • 1 tablespoon olive oil
  • 1/2 cup chicken stock
  • 250 grams cherry tomatoes (truss, cut into small bunches)
  • Baby spinach leave, to serve

How to Make

  • Step 1: Place chicken on a boards and spread evenly with cheese and then top with aspargus and roll up to enclose.

  • Step 2: Season with salt and pepper and then roll up in prosciutto and ties with two pieces of kitchen string to secure.

  • Step 3: Heat oil in a large frying pan over a medium to high heat and then add chicken and cook, turning occasionally, for 10 minutes or until browned.

  • Step 4: Add the stock and tomatoes and cover pan with a lid and reduce heat to low and simmer for about 5 minutes, or until chicken is cooked.

  • Step 5: Remove and discard string and serve chicken with pan juices, tomatoes and spinach leaves.
