Step 1: Place chicken on a boards and spread evenly with cheese and then top with aspargus and roll up to enclose.
Step 2: Season with salt and pepper and then roll up in prosciutto and ties with two pieces of kitchen string to secure.
Step 3: Heat oil in a large frying pan over a medium to high heat and then add chicken and cook, turning occasionally, for 10 minutes or until browned.
Step 4: Add the stock and tomatoes and cover pan with a lid and reduce heat to low and simmer for about 5 minutes, or until chicken is cooked.
Step 5: Remove and discard string and serve chicken with pan juices, tomatoes and spinach leaves.
