Ingredients

The ingredients are:
  • 630 grams mashed potatoes (store-bought frozen, thawed, 3 cups)
  • 1 can (415 grams) pink salmon (drained and flaked)
  • 1 cup breadcrumbs (soft, fresh)
  • 2 green onions, chopped
  • 1 lemon (grated zest and juice of)
  • 1 large egg (room temperature)
  • 1/2 cup all-purpose (plain)
  • 1/4 cup oil (vegetable or sunflower oil)
  • 1/2 cup tartar sauce (to serve)
  • Mixed salad leaves, to serve

How to Make

  • Step 1: Combine mashed potato, salmon, breadcrumbs, onion, zest, juice and egg in a large bowl and then shape into 8 oval patties.

  • Step 2: Place flour in a shallow dish.

  • Step 3: Dust patties in flour to lightly coat, shake of any excess.

  • Step 4: Heat oil in a large frying pan over high heat and cook patties, in batches for 2 minutes each side or until golden brown and then drain on paper towel.

  • Step 5: Serve rissoles with tartare sauce and salad leaves.

  • Step 6: BUDGET TIP - instead of store-bought mashed potato, make your own using 3 large all-rounder poatoes (such as desiree).
