Step 1: Combine mashed potato, salmon, breadcrumbs, onion, zest, juice and egg in a large bowl and then shape into 8 oval patties.
Step 2: Place flour in a shallow dish.
Step 3: Dust patties in flour to lightly coat, shake of any excess.
Step 4: Heat oil in a large frying pan over high heat and cook patties, in batches for 2 minutes each side or until golden brown and then drain on paper towel.
Step 5: Serve rissoles with tartare sauce and salad leaves.
Step 6: BUDGET TIP - instead of store-bought mashed potato, make your own using 3 large all-rounder poatoes (such as desiree).
