How to Make

  • Step 1: Using a pestle and mortar, grind the chiles into powder. Set aside.

  • Step 2: Heat the bacon fat in a skillet until hot. Add several shakes of salt to the oil in the frying pan.

  • Step 3: Add the potatoes and fry until tender (5-10 minutes). Remove the potatoes and set aside.

  • Step 4: Add the onion and chile powder to the oil and saute until onion is soft.

  • Step 5: Return the potatoes to the skillet and fry until the potatoes are browned to your liking. Serve immediately.
