Step 1: In a deep skillet, saute onions in butter 10 minutes. Remove to a mixing bowl.
Step 2: Wipe skillet clean and add enough oil to approximately 1 inch deep. Heat oil over moderately high heat until hot but not smoking.
Step 3: While oil is heating, combine all ingredients except flour tortillas in the mixing bowl. Lay out the four tortillas and portion 1/4 of the mixture onto each tortilla. Wrap burrito style with seam side down.
Step 4: When oil is ready, fry 2 burritos, seam side down, until lightly browned on undersides (1 to 2 minutes). Turn over with tongs and fry until golden (1 to 2 minutes). Transfer to paper towels to drain briefly. Fry the remaining 2 burritos as you did the first two.
Step 5: Serve immediately.
