Step 1: Preheat oven to 180C.
Step 2: Line a baking tray with baking paper and arrange the chicken on the lined tray and bake for 30 to 35 minutes or until cooked through.
Step 3: Meanwhile place the spring onion in a bowl and cover with iced water and set aside for 10 minutes or until curled and then drain.
Step 4: Combine spinach, apple and half the spring onion curls in a bowl.
Step 5: Juice 1 lime and drizzle over salad and toss to combine.
Step 6: Cut remaining lime into wedges
Step 7: Top chicken with the remaining spring onion curls and serve with the salad and lime wedges.
