Ingredients

The ingredients are:
  • 225 grams pork sausage meat (cooked, 1 cup)
  • 1/4 cup Swiss cheese, shredded
  • 2 whole mushrooms (sliced)
  • 3 large eggs
  • 1 tablespoon cream
  • Salt, dash
  • Pepper, dash
  • 1 tablespoon butter
  • 1/4 cup spinach (baby)
  • 1 tablespoon sour cream (optional)
  • 1 teaspoon chives, optional

How to Make

  • Step 1: In skillet, melt butter and saute mushrooms. If sausage is raw cook with the mushrooms, otherwise add sausage close to the end to heat. Remove, set aside.

  • Step 2: In small bowl whisk eggs with cream, salt and pepper. Pour into skillet, medium heat, when eggs are getting close to done add cheese, mushroom/sausage mix and baby spinach to one side of the omelet.

  • Step 3: Fold the other side over. Reduce heat to low, cook covered for two minutes.

  • Step 4: Remove to plate, top with sour cream and/or chives (optional).
