Ingredients

The ingredients are:
  • 3 cups water
  • 1 cup apple cider vinegar
  • 1 pound raw shrimp (large shrimp, peeled and deveined with tail left on)
  • 1/3 cup shallots, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 3 tablespoons oil (canola oil)
  • 1 tablespoon sesame oil (toasted)
  • 3 cups watermelon, chopped
  • 2 cups romaine lettuce, chopped
  • 2 cups spinach
  • 1 avocado, whole (cut into wedges)
  • 1/2 cup cilantro, divided
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon sesame seeds (black)
  • 1/2 teaspoon sesame seeds (toasted)

How to Make

  • Step 1: Fit a steamer basket into a large pot and add 3 cups of water and the vinegar; bring to a boil. Add shrimp; cover and steam 5 minutes. Remove shrimp to a baking sheet; shill 15 minutes.

  • Step 2: In a bowl combine the shallots, soy sauce, lime juice and honey and let stand 10 minutes. Whisk in oils.

  • Step 3: Add watermelons, lettuce, spinach, avocado and 1/4 cup cilantro to the bowl with the dressing; toss. Place salad on a large platter (leave any extra dressing in bowl) and add shrimp, the pepper flakes if using and 1/4 cup cilantro. Toss. Place shrimp mixture on top of salad and sprinkle with sesame seeds.
