Step 1: Combine the steak with the cornstarch and 1 tablespoon of oil. A zip lock bag works well
Step 2: Heat 1 tablespoon of oil in your wok or skillet, add beef, ginger and stir fry for 3 minutes
Step 3: Mix together the soy sauce, sherry, sugar and mixed cornstarch, add to beef
Step 4: Stir fry 1 minute longer or until the sauce has thickened, add onions and serve
