Step 1: In a nonstick pot, combine oats, cinnamon, vanilla extract, and salt.
Step 2: Add milk and 1 1/4 cups water. Bring to a boil, and then reduce to a simmer.
Step 3: Add peaches, and cook and stir until thick and creamy, 12 - 15 minutes.
Step 4: Transfer to a medium bowl, and stir in sweetener. Let cool until thickened.
Step 5: Top with yogurt and almonds.
