Step 1: Score the skin of a very ripe plantain, then peel and cut into slices at an angle.
Step 2: Heat oil or butter in a skillet over medium heat.
Step 3: Place plantain slices in skillet. Cook until lightly brown, then flip slices over and brown second side.
Step 4: When plantains seem soft and almost done, then sprinkle with sugar and then flip one more time. Sprinkle tops with cinnamon. Cook 1 more minute, remove and serve.
