Ingredients

The ingredients are:
  • 1 1/4 cups whole wheat flour (white whole wheat or pastry flour)
  • 1/2 cup oats (old fashioned)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup kale, packed (torn leaves)
  • 1 cup firmly packed brown sugar (light)
  • 1/2 cup unsalted butter (softened)
  • 1 tablespoon molasses
  • 2 large eggs
  • 1 tablespoon vanilla (or mint) extract
  • 1 cup semisweet chocolate chips (light or dark)

How to Make

  • Step 1: Preheat oven to 350F and spray 2 cookie sheets or line with parchment paper.

  • Step 2: Combine flour oats, baking powder and salt in a large bowl; set aside.

  • Step 3: Place the kale in a food processor and pulse 10-15 times, until finely chopped but not pureed.

  • Step 4: Combine the brown sugar and butter in a large bowl and beat with an electric mixer on low speed until thoroughly combined.

  • Step 5: Add the molasses and eggs, one at a time, mixing on low speed until just incorporated.

  • Step 6: Add the vanilla extract and mix until well combined.

  • Step 7: Slowly add the dry ingredients, mixing to combine.

  • Step 8: Add the chocolate chips and stir with a wooden spoon 2 or 3 times to distribute.

  • Step 9: Using a tablespoon, drop the batter onto the prepared baking sheet, spacing cookies 1" apart.

  • Step 10: You will need to make cookies in batches.

  • Step 11: Bake 12-14 minutes until cookies are firm around the edges but still slightly soft in the center.

  • Step 12: Transfer cookies to a cooling rack to cool completely.
