Step 1: In large stock pot add oil, shallot and ground Italian sausage. Cook together breaking apart sausage. When brown add garlic, sautee for a few more minutes. Add seasoning and tomatoes. Reduce and simmer on low for approximately 3 hours, stirring occasionally (may need to add some water if the mixture gets too thick).
Step 2: When done remove Bay leaves. Add the Parmesan cheese. Serve over noodles.
