Step 1: Cook onions with butter in a saute pan until brown and carmelized. (can use less or more butter).
Step 2: Peel pototatoes, slice (end to end) into 1/2" planks.
Step 3: Butter or Pam a 9 x 13" casserole dish.
Step 4: Lay down 1/2 of potatoes, 1/2 onion, 1/2 Gouda cheese, 1/2 Bechamel, season. Repeat with another layer.
Step 5: Top with smoked pork chops. Tightly cover with foil or lid.
Step 6: Bake 45 minutes at 425 degrees. Uncover and continue cooking for 15 more minutes.
