  • 3 tablespoons butter, melted

  • 2 large eggs (beaten)
  • 3/4 cup milk
  • 1 cup cottage cheese (small curd)

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Coat muffin tins with cooking spray.

  • Step 3: Sift together flour, sugar and baking soda. Then add remaining ingredients, one at at time, in the order listed in the ingredients. Stir to incorporate each before adding the next.

  • Step 4: Fill muffin tins 1/2 full and bake for 15-20 minutes.

  • Step 5: Cool a few minutes before removing from muffin pan.

  • Step 6: Serve warm with butter.
