Ingredients

The ingredients are:
  • Cooking oil spray
  • 500 grams chicken drumettes
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon pepper seasoning
  • 2 cloves garlic crushed
  • 1 tablespoon oil (vegetable or peanut oil, plus 1 tablespoon extra)
  • 2 tablespoons honey (plus 2 tablespoons extra)
  • 1 lemon, whole (scrubbed and sliced)
  • 100 grams snow peas
  • 2 teaspoons sesame seeds (toasted)
  • 3 cups cooked Jasmine rice (optional)

How to Make

  • Step 1: Preheat oven to 200C/180C fan-forced.

  • Step 2: Line an oven tray with baking paper and place a wire rack on prepared tray and spray rack with oil.

  • Step 3: Place chicken in a glass bowl.

  • Step 4: Combine flour and seasoning in a small bowl and add flour mixture to chicken along with garlic, half the oil and honey, toss to combine.

  • Step 5: Arrange chicken on rack and bake, turning occasionally and brushing with remaining oil, for 25 minutes or until browned and cooked.

  • Step 6: Meanwhile hat extra oil in a large fry pan over moderate heat and cook lemon slices in batches for 30 seconds each side or until browned and heated and then add the snow peas and cook and stir for 2 minutes or until tender.

  • Step 7: Add baked chicken to pan and toss to combine and then sprinkle with sesame seeds and serve with rice (if using).
