  • 1 cup granulated sugar
  • 4 cups rhubarb, diced
  • 1 cup miniature marshmallows
  • FOR CAKE
  • 3/4 cup granulated sugar
  • 1 1/4 cup all-purpose flour
  • 1 1/4 teaspoon baking powder
  • Salt, dash
  • 1/2 cup milk
  • 4 tablespoons butter, softened
  • 1 large egg (beaten)
  • 1 teaspoon vanilla

How to Make

  • Step 1: Set oven to 350 degrees.

  • Step 2: Grease bottom of 9x13 pan.

  • Step 3: Place Rhubarb in bottom of pan. Sprinkle sugar and vanilla over the rhubarb.

  • Step 4: In a separate bowl mix together the cake section ingredients. Pour over rhubarb/marshmallows.

  • Step 5: Bake 40 - 50 minutes or until cake is done.
