Ingredients

The ingredients are:
  • 4 tablespoons oil (canola oil divided)
  • 2 tablespoon fresh lemon juice
  • 1 1/2 teaspoon seasoned salt
  • 1 1/2 teaspoon dry oregano
  • 1 1/2 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 tsp chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon red pepper flakes (crushed, more or less your option)
  • 1 1/2 pounds boneless skinless chicken breasts (stir fry chicken pieces)
  • 60 grams red bell pepper (1/2 medium pepper, julienned)
  • 60 grams green bell pepper (1/2 medium pepper, julienned)
  • 4 green onions (thinly sliced)
  • 1/2 cup yellow onion (cooking onion, chopped)
  • 6 (300 grams) tortillas (flour or corn tortillas - optional)
  • Shredded cheddar, taco sauce, salsa, guacamole & sour cream. (optional choices)

How to Make

  • Step 1: In a large plastic bag, combine 2 tbsp oil, 2 tbsp lemon juice and all the seasonings.

  • Step 2: Add chicken, seal and massage marinade into the chicken.

  • Step 3: Refrigerate 1-4 hours.

  • Step 4: In a large skillet saute the peppers & onions in the remaining oil until crisp tender.

  • Step 5: Remove & keep warm.

  • Step 6: Discard marinade & add chicken to the skillet.

  • Step 7: Saute chicken over medium heat 5-6 minutes or until chicken is cooked through.

  • Step 8: Add peppers back into the skillet for a few minutes to heat through.

  • Step 9: Serve in a tortilla or over rice adding any condiments you like.
