Ingredients

The ingredients are:
  • 1 teaspoon olive oil
  • 2 medium yellow onions (peeled and chopped)
  • 12 garlic cloves (peeled and minced)
  • 1/8 teaspoon dried marjoram
  • 1/8 teaspoon dried mint
  • 5 whole peppercorns
  • 1 teaspoon tomato paste
  • 1 pound ripe tomatoes, peeled & sliced
  • 4 cups fish stock
  • 1 pound white fish (firm fish, cut into chunks)
  • 1/2 cup cooked rice

How to Make

  • Step 1: Heat oil in a dutch oven over medium-high heat.

  • Step 2: Saute chopped onion until soft.

  • Step 3: Add garlic, herbs, & tomato paste. Cook for a few minutes.

  • Step 4: Add tomatoes and fish stock. Bring to boil.

  • Step 5: Add fish, bring back to boil; Lower heat and simmer for about 10 minutes.

  • Step 6: Before serving add cooked rice and heat through.
