  • 1/2 teaspoon salt
  • 2 cups watermelon, chopped (seeded 1/2 inch chopped)
  • 1/2 cup cucumber, chopped (English cucumber, peeled, seeded, chopped 1/4 inch dice)
  • 1/2 cup red bell pepper (seeded, chopped 1/4 inch dice)
  • 1/4 cup red onion (chopped 1/4 inch dice)
  • 1 jalapeno pepper (finely chopped)
  • 1/4 cup cilantro leaves (finely chopped)
  • 2 tablespoons basil (fresh, finely chopped)
  • 2 tablespoons mint leaves (fresh, finely chopped)

How to Make

  • Step 1: In a large bowl whisk together the lime juice, honey & salt until the salt has disolved.

  • Step 2: Add all the remaining ingredients.
