  • 2 large eggs (beaten)
  • 1/2 cup oil (vegetable oil)
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 cup corn (fresh cooked corn, scraped off the cob with the "cream" included, or 1 cup leftover corn plus 1/4 cup milk)
  • 1 cup sour cream
  • 1/4 cup milk
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 tablespoon honey

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Grease a 9" x 9 " pyrex ( or other) deep pan.

  • Step 3: Beat eggs and oil lightly.

  • Step 4: Add the rest of the ingredients - Mix lightly (don't over mix).

  • Step 5: Pour into greased pan and bake at 400 degrees for 25-35 minutes or until brown and baked through.

  • Step 6: Let cool on a rack , while in the pan.
