The ingredients are:
  • 1 2/3 cup ground almonds (you can buy almond meal/flour in most grocery stores now)
  • 1 cup granulated sugar
  • 1/2 tablespoon fresh lemon juice
  • 1 teaspoon fresh lemon zest
  • 1 large egg white (only)
  • 1/2 teaspoon pure vanilla extract
  • 40 grams almond nuts (25 whole, blanched almonds)

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: In a large bowl, mix all ingredients (except the whole almonds) until well combined.

  • Step 3: Form into small balls with your hands, and put them on a greased or lined cookie sheet.

  • Step 4: Flatten each ball with your thumb and place a whole, blanched almond on top of each.

  • Step 5: Bake for 10-12 minutes, or until golden and cooked through. Enjoy!
