Step 1: Preheat oven to 200C/180C fan forced.
Step 2: Line a large baking tray with baking paper.
Step 3: Place mince, egg, 1/2 the chives, garlic, onion, oats, mustard and 2 tablespoon barbecue sauce in a bowl and season with salt and pepper and mix to combine.
Step 4: Shape level tablespoon of mixture into 24 patties and place on prepared tray and bake for 10 minutes.
Step 5: Spread pattie with a little of remaining barbecue sauce and top each with 1 piece of cheese (you will have 3 squares leftover) and the bake for a further 2 minutes or until cheese just begins to melt.
Step 6: Meanwhile, heat oil in a large frying pan over medium high heat and cook bacon, turning, for 4 to 5 minutes or until golden and then transfer to a paper towel line plate to drain and then cut each bacon rasher, crossways into 6 pieces.
Step 7: Cut each lettuce leaf lengthways into 4 long strips and then thread 1 tomato onto a 1 skewer, followed by 1 pickle slice and staring at 1 short end of 1 piece of lettuce, fold over 2cm and keep folding until you get to the end and then follow on with 2 pieces bacon and 1 patty.
Step 8: Repeat with remaining tomatoes, pickle slices, lettuce, bacon, patties and skewers.
Step 9: Combine mayonnaise, tomato sauce and remaining chives in a small bowl and season with salt and pepper and serve burger bites with sauce.
