Step 1: Roughly chop coriander stems and roots and combine in a small food processor with garlic, ginger and chillies and process until finely chopped and then add dates and process until well combined.
Step 2: Transfer to a small saucepan and stir in vinegar, honey and 1 1/4 cups water and bring to the boil over medium heat, then simmer for 20 to 25 minutes, stirring occasionally, until sauce has reduced and thickened to desired consistency.
Step 3: Use as a dipping sauce for fish cakes or dim sims, or add lime juice and use as a salad dressing.
