Ingredients

The ingredients are:
  • 1 bunch coriander (stems and roots only, roughly chopped)
  • 4 garlic cloves (roughly chopped, large cloves)
  • Fresh ginger root (4cm piece, peeled and sliced)
  • 9 red chillies (long chillies, roughly chopped)
  • 2 red chillies (small chillies, roughly chopped)
  • 42 grams dates (6 medjool, pitted, chopped)
  • 1/3 cup apple cider vinegar
  • 1 tablespoons honey

How to Make

  • Step 1: Roughly chop coriander stems and roots and combine in a small food processor with garlic, ginger and chillies and process until finely chopped and then add dates and process until well combined.

  • Step 2: Transfer to a small saucepan and stir in vinegar, honey and 1 1/4 cups water and bring to the boil over medium heat, then simmer for 20 to 25 minutes, stirring occasionally, until sauce has reduced and thickened to desired consistency.

  • Step 3: Use as a dipping sauce for fish cakes or dim sims, or add lime juice and use as a salad dressing.
