Step 1: To make filling, combine ingredients in a small microwave-proof bowl and microwave on high for 2 to 3 minutes or until potato is soft and then mash well to combine.
Step 2: Lay out the wonton wrappers on a clean work surface and brush with water to moisten.
Step 3: Divide the filling into 24 portions and place centrally on each wrapper and bring the corners of the wrapper together, to form a money bag shape and seal the sides.
Step 4: Meanwhile bring a saucepan or wok of water to medium boil.
Step 5: Spray inside a bamboo steamer with oil, add dim sum and steam on medium boil for 10 minutes or until cooked through.
Step 6: Garnish with coriander and serve with soy sauce.
