Ingredients

The ingredients are:
  • FOR CREOLE-SPICED POPCORN SEASONING
  • 1/4 cup butter, clarified
  • 1 1/2 tablespoons paprika (sweet)
  • 1 tablespoon garlic powder
  • 1 tablespoon thyme
  • 1 teaspoon pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (to taste)
  • 1 teaspoon salt (or to taste)
  • FOR POPCORN
  • 1/4 cup bacon fat (or rendered bacon fat)
  • 2/3 cup popcorn kernels
  • 1/2 teaspoon kosher salt (or salt of choice, to taste)
  • Creole-Spiced Popcorn Seasoning (see recipe above)

How to Make

  • TO MAKE THE CREOLE-SPICED POPCORN SEASONING

  • Step 1: Heat clarified butter over medium heat until bubbling. Add spices and stir. Continue to heat for 1 minute. Remove from heat and keep warm.

  • TO MAKE THE POPCORN

  • Step 2: Place the bacon grease, along with 3 kernels of corn, in a heavy-bottom pan. Heat at medium-high until the kernels pop, about 4 minutes. Remove popped kernels.

  • Step 3: Pour in the remaining popcorn and stir with a wooden spoon to coat kernels. Place a lid on the pot and continue to heat until kernels begin to pop. Turn off heat. With lid tightly secured, shake pot to ensure that all kernels pop. Continue to agitate until the popping slows, 1–2 minutes.

  • Step 4: Remove from heat and immediately transfer to a large serving bowl. Sprinkle with salt and drizzle with the Creole-Spiced butter.
