Step 1: Line three large oven trays with baking paper.
Step 2: Sift sugar and cocoa into a large bowl and then stir in chocolate, almond meal, chopped almonds and dates and then add egg whites and using a wooden spoon, stir until combined.
Step 3: Spoon tablespoon of the mixture, about 4cm apart, on prepared trays.
Step 4: Cook two trays at a time, in a moderately slow oven (160C) for about 25 minutes, or until biscuits/cookies are firm.
Step 5: Stand trays for 10 minutes and then transfer to wire racks to cool.
Step 6: Repeat with remaining tray.
