Ingredients

The ingredients are:
  • 1 cup self-rising flour
  • 1/4 cup custard powder
  • 125 grams unsalted butter (soft)
  • 1/2 cup caster sugar
  • 1 large egg
  • 1 cup icing sugar mixture (sifted)
  • Freckle chocolates (20 freckle, or 2 tablespoon chocolate sprinkles)

How to Make

  • Step 1: Preheat oven to 180C.

  • Step 2: Line two baking trays with baking paper.

  • Step 3: Sift self-raising flour and custard powder together.

  • Step 4: Beat butter and sugar together with electric beaters until pale and creamy and then add the egg and beat until just combined and then stir in flour mixture to form a soft dough.

  • Step 5: Roll tablespoonfuls of the mixture into balls and place onto trays, allowing room for spreading and then flatten slightly using fingertips.

  • Step 6: Bake for 15 minutes or until lightly golden ad then remove from oven and cool completely.

  • Step 7: Gradually add 2 to 4 tablespoons water to icing sugar and mix to a thick pourable icing and then spread a little onto each biscuit/cookie and site for 10 seconds and then top with a freckle or sprinkles.

  • Step 8: NOTE you can tint the icing with a drop of fool colouring if desired.
