Step 1: Combine 1 tablespoon salt, Cajun seasoning, paprika and pepper in a small bowl and then sprinkle on chicken pieces and place on a large plate and cover and refrigerate for 2 hours, or overnight if time permits.
Step 2: Combine flour, cornflour and remaining salt in a large bowl.
Step 3: Whisk buttermilk and egg together in a large bowl and coat chicken pieces with buttermilk and then flour mixture and place on a tray.
Step 4: Line a baking tray with baking paper and place a wire rack over the paper.
Step 5: Heat oil in a deep frying pan over medium heat and when hot, cook chicken in batches for 10 minutes or until golden, crisp and cook through and then transfer to a tray.
Step 6: Serve with coleslaw and lime wedges.
