Ingredients

The ingredients are:
  • 2 tablespoons flaked salt
  • 1 tablespoon Cajun seasoning
  • 2 teaspoon smoked paprika
  • 1/2 teaspoon finely ground black pepper
  • 1.5 kilogram chicken pieces
  • 1 1/2 cups all-purpose flour (plain)
  • 1/2 cup cornflour
  • 1 cup buttermilk
  • 1 large egg
  • Vegetable oil, for deep frying
  • To Serve
  • Coleslaw (see recipe #29620)
  • Lime wedges

How to Make

  • Step 1: Combine 1 tablespoon salt, Cajun seasoning, paprika and pepper in a small bowl and then sprinkle on chicken pieces and place on a large plate and cover and refrigerate for 2 hours, or overnight if time permits.

  • Step 2: Combine flour, cornflour and remaining salt in a large bowl.

  • Step 3: Whisk buttermilk and egg together in a large bowl and coat chicken pieces with buttermilk and then flour mixture and place on a tray.

  • Step 4: Line a baking tray with baking paper and place a wire rack over the paper.

  • Step 5: Heat oil in a deep frying pan over medium heat and when hot, cook chicken in batches for 10 minutes or until golden, crisp and cook through and then transfer to a tray.

  • Step 6: Serve with coleslaw and lime wedges.
