Step 1: Preheat oven to 220C and line a baking tray with baking paper.
Step 2: Use an 11cm round pastry cutter to cut four discs from the sheet of pastry.
Step 3: Spread the jam on pastry discs and top with the apple and brush with butter and bake for 12 to 15 minutes or until pastry is puffed and golden.
Step 4: Glaze with the extra warm jam and serve topped with ice-cream and sprinkled with cinnamon sugar.
