Step 1: Preheat oven to 200C.
Step 2: Brush a 20cm (base) round springform pan with a little of the butter and place pan on a baking tray.
Step 3: Line base of pan with a layer of potato slices, overlapping slightly and brush with butter and sprinkle over 2 tablespoons cheese and season with salt and pepper and then repeat layers 4 times to make a total of 5 layers.
Step 4: Bake uncovered, for 50 to 55 minutes or until potatoes are tender when tested with a skewer and top is golden and then let stand for 5 minutes.
Step 5: Release pan and slide galette onto a serving plate and cut into wedges and serve with a roast or grilled fish or meat of choice.
