Ingredients

The ingredients are:
  • 6 -8 slices uncooked bacon, more if desired
  • 4 medium potatoes, peeled and diced into 1/2 inch pieces
  • 1 small onion (or 4 -5 green onions, chopped)
  • 1/2 medium green bell pepper, seeded and chopped (or a mixture of both red and greenbell peppers)
  • 1/2 teaspoon seasoning salt
  • Fresh ground black pepper, to taste
  • 2 to 3 tablespoons grated parmesan cheese
  • 6 to 7 large eggs, lightly beaten
  • 1-1/2 cups shredded Swiss cheese (or can use cheddar cheese)
  • 1 cup whole milk or 1 cup half-and-half cream
  • 1/3 cup Bisquick baking mix
  • 2 tablespoons butter, melted

How to Make

  • Step 1: In a extra-large oven-proof skillet or frypan cook bacon until crisp, do not drain (leave the bacon in the skillet). Add in the diced potatoes, chopped onion, green pepper, salt and pepper; saute until the potatoes are fork-tender (this should take 20-25 minutes)turn off the heat then mix in the grated Parmesan cheese.

  • Step 2: Preheat oven to 350 degrees F.

  • Step 3: In a large bowl, combine the lightly beaten eggs, whole milk, Bisquick baking mix, grated cheese and the melted butter; mix well. Pour over the bacon/potato mixture in the skillet, sprinkle with extra Parmesan cheese if desired; mix gently.

  • Step 4: Bake, uncovered for 20-25 minutes or until a knife inserted in the middle comes out clean (don’t overbake).
