Ingredients

The ingredients are:
  • 1 packet (500 grams) dry spaghetti
  • 2 tablespoons olive oil
  • 180 grams bacon, diced (6 rashers streaky bacon)
  • 2 cloves garlic (minced)
  • 1 whole lemon (zested and juiced)
  • 1/2 teaspoon chilli flakes
  • 1/2 red chilli (de-seed and very finely chopped)
  • 400 grams fresh shrimp (peeled tail on prawns, I prefer tail off)
  • Salt, to season
  • Pepper, to season
  • 1/2 cup chopped parsley
  • 1/2 cup grated parmesan cheese

How to Make

  • Step 1: Cook pasta for 2 minutes less than instructions on the packet.

  • Step 2: While the pasta cooks, heat oil in a large frypan and cook bacon until it starts to turn golden and then add garlic, lemon zest, chilli flakes and fresh chilli and sizzle another 30 seconds.

  • Step 3: Add the prawns and stir-fry over medium heat until they change colour (2 to 3 minutes).

  • Step 4: Drain pasta, reserving a half cup of the cooking liquid.

  • Step 5: Add pasta, lemon juice, salt, pepper and reserved cooking liquid to the pan with the prawns and toss over heat so the pasta absorbs the flavours.

  • Step 6: Sprinkle on parsley and serve with parmesan.
