Step 1: Put the onion in a bowl with a good pinch of sugar and a splash of vinegar and toss and leave while you make the burgers.
Step 2: Cut the capsicum into 4 wide, square-ish pieces and rub with oil and grill until charred and softened a bit.
Step 3: Slice the haloumi into 4 wide pieces and rub with oil and the jerk seasoning, then grill until soft and golden.
Step 4: Spread a little may on the bun bases, add some rocket, then top with capsicum and a slice of haloumi.
Step 5: Drain the onion, add to the burgers and then serve.
