Ingredients

The ingredients are:
  • 25 grams red onion (1/4 onion, very thinly sliced)
  • Caster sugar, 1 pinch
  • Red wine vinegar, splash
  • 1 red capsicum (large)
  • 250 grams haloumi
  • 4 (200 grams) bread buns (brioche burger buns, toasted)
  • Oil
  • 3 teaspoon jerk seasoning (or Cajun seasoning)
  • 2 1/4 tablespoons mayonnaise
  • 50 grams rocket

How to Make

  • Step 1: Put the onion in a bowl with a good pinch of sugar and a splash of vinegar and toss and leave while you make the burgers.

  • Step 2: Cut the capsicum into 4 wide, square-ish pieces and rub with oil and grill until charred and softened a bit.

  • Step 3: Slice the haloumi into 4 wide pieces and rub with oil and the jerk seasoning, then grill until soft and golden.

  • Step 4: Spread a little may on the bun bases, add some rocket, then top with capsicum and a slice of haloumi.

  • Step 5: Drain the onion, add to the burgers and then serve.
