Ingredients

The ingredients are:
  • 180 grams dried soba noodles
  • 1 cup low-sodium chicken stock
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon ginger root, finely sliced
  • 1 garlic clove, sliced
  • 1 teaspoon sesame oil
  • 400 grams boneless skinless chicken thighs (4 small fillets, trimmed)
  • 2 bunch bok choy
  • 1 tablespoon sesame seeds (toasted)

How to Make

  • Step 1: Prepare noodles as directed on the packet and then drain and set aside.

  • Step 2: Place stock, soy, honey, ginger, garlic and oil in a saucepan over medium heat and bring to a boil, add chicken and reduce heat to medium-low and cover and cook for 10 minutes, or until chicken is tender and then remove the chicken and set aside.

  • Step 3: Add sliced bok coy to cooking liquid and cook for 1 minutes.

  • Step 4: Place the noodles on to plates and top with bok choy.

  • Step 5: Slice chicken and divide between plates and drizzle each with a little of the cooking liquid and top with the toasted sesame seeds.
