Step 1: Prepare noodles as directed on the packet and then drain and set aside.
Step 2: Place stock, soy, honey, ginger, garlic and oil in a saucepan over medium heat and bring to a boil, add chicken and reduce heat to medium-low and cover and cook for 10 minutes, or until chicken is tender and then remove the chicken and set aside.
Step 3: Add sliced bok coy to cooking liquid and cook for 1 minutes.
Step 4: Place the noodles on to plates and top with bok choy.
Step 5: Slice chicken and divide between plates and drizzle each with a little of the cooking liquid and top with the toasted sesame seeds.
