Ingredients

The ingredients are:
  • 1 can (12 ounce) white tuna (solid in spring water, well-drained & flaked, Crown Prince brand suggested)
  • 2 shallots, thin-sliced (small shallots)
  • 1/4 cup olive oil
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon capers (well-drained & non-pareil suggested, smallest size)
  • 1 teaspoon lemon zest
  • 1 whole lemon (fresh, juice of)
  • 1/2 teaspoon crushed red pepper
  • 1 package (8 ounce) cream cheese (softened)
  • 4 ounces sliced pumpernickel bread (toasted, 4 slices, 1/2 in thick)

How to Make

  • Step 1: Toss together tuna, shallots, oil, chives, capers, lemon zest, lemon juice & crushed red pepper in a med bowl.

  • Step 2: Spread cream cheese evenly among toasted bread slices & top evenly w/the tuna mixture. Cut each slice into quarters & serve immediately. My choice would be to serve them w/mellow avocado wedges &/or the sweetness of fresh grapes or mango. :-)
