Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 55 grams portabella mushroom (1 mushroom, stem/gills removed & chopped into large pieces)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 3 ounces bread buns (2 sandwich buns)
  • 8 spinach leaves (fresh)
  • 70 gram avocado (1/2 ripe)
  • 1 slice (1 ounce) mozzarella cheese
  • 2 tablespoons olive oil (or melted butter)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Heat 2 tablespoons olive oil in small non-stick frying pan. Add mushroom saute until lightly browned on all sides and slightly softened. Sprinkle with Italian seasonings and garlic powder and saute 1 more minute.

  • Step 3: While mushrooms are cooking, place the bottoms of 2 rolls in a baking dish. Place spinach leaves on the bottom of the rolls. Spread 1/4 avocado on the tops of the rolls, smashing the avocado so it sticks to the buns. Place mushrooms on top of spinach leaves, then cover with each with 1/2 slice of cheese. Add the top of buns with avocado onto the sandwich.

  • Step 4: Drizzle oil oil or melted butter over sandwiches.

  • Step 5: Bake in preheated oven for about 20 minutes or until heated through and buns are slightly toasted.
