Ingredients

The ingredients are:
  • 3/4 kg pork ribs (approx, you need 4 x 4 pork rib racks)
  • 400 ml beer (ginger beer)
  • 1 cup brown sugar
  • 1 cup barbecue sauce (smoky)
  • 2 cinnamon sticks
  • 1 tablespoon cocoa powder

How to Make

  • Step 1: Combine all ingredients in a large jug and mix together really well then pour the marinade over the pork ribs, cover and refrigerate for at least 6 hours or overnight, if time permits.

  • Step 2: Preheat the oven to 160°C.

  • Step 4: Place the ribs, onto a baking tray and place into the oven, cook for 1 ½ hours basting frequently until sauce is thick and gooey.

  • Step 5: Serving Suggestion ~ Serve ribs hot with a potato salad and crusty bread and a bowl of warm water for sticky fingers.
