Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 yellow onion (finely chopped)
  • 1 tablespoon Moroccan seasoning
  • 1 jar (500 gram) pasta sauce (tomato sauce with vegetables)
  • 1 can (400 grams) garbanzo beans (chickpeas, drained)
  • 1/3 cup raisins
  • 1/2 cup water, boiling
  • Salt and pepper, to taste
  • 150 grams green beans (trimmed and chopped)
  • 2 zucchini, chopped
  • 2 cups couscous (cooked to serve)
  • Toasted slivered almonds, to garnish

How to Make

  • Step 1: Heat oil in a large saucepan over a medium heat and add onion and cook, stirring until soft and then add seasoning and cook, stirring until fragrant.

  • Step 2: Stir in pasta sauce, chickpeas, raisins and water and season with salt and pepper and bring to the boil and simmer, covered, stirring occasionally for about 5 minutes, or until slightly thickened and then add beans and zucchini and simmer for a further 5 minutes, or until tender.

  • Step 3: Serve tagine over couscous and garnish with almonds.
