Ingredients

The ingredients are:
  • 1 packet (1.6 kilogram) chicken (seasoned chicken, roasting portions)
  • 250 grams dryorecchiette pasta
  • 1 punnet (50 grams) cherry tomatoes (quartered)
  • 1 tub (180 grams) bocconcini (mini bocconcini, drained)
  • 1/4 cup balsamic salad dressing
  • Fresh basil leaves, to garnish (optional)

How to Make

  • Step 1: Place chicken in a large greased roasting pan and cook in a moderate oven (180C) for about 45 minutes or until golden and cooked.

  • Step 2: Meanwhile, cook pasta in a large saucepan of boiling salted water and cook until tender and then drain and then place in a large bowl and cool slightly.

  • Step 3: Add tomatoes, bocconcini and drassing to pasta and season with salt and pepper and toss well to combine.

  • Step 4: Serve pasta salad with chicken and garnish with basil leaves, if using.
