Step 1: Place chicken in a large greased roasting pan and cook in a moderate oven (180C) for about 45 minutes or until golden and cooked.
Step 2: Meanwhile, cook pasta in a large saucepan of boiling salted water and cook until tender and then drain and then place in a large bowl and cool slightly.
Step 3: Add tomatoes, bocconcini and drassing to pasta and season with salt and pepper and toss well to combine.
Step 4: Serve pasta salad with chicken and garnish with basil leaves, if using.
