Ingredients

The ingredients are:
  • 2 tablespoons all-purpose flour
  • 2 big (6 to 7 pounds) whole chickens (2 big fryer chickens, quartered, about 3 - 3 1/2 pounds each)
  • Salt & ground red pepper
  • 4 cups chopped yellow onions
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1 cup water
  • 1 cup chopped parsley
  • 1 tablespoon chopped garlic
  • 1 small bay leaf
  • 1 1/2 cups wine (Sauterne wine)
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon bitters ( Angostura or Peychaud)

How to Make

  • Step 1: Grease the oven bag, put 2 Tb flour in the bag and shake, coating the sides well.

  • Step 2: Put the bag in a large pan, sprinkle the fryers with salt and pepper, then place in the bag.

  • Step 3: Add the onion, celery, bell pepper, parsley, garlic and bay leaf.

  • Step 4: Combine the Sauterne, soy sauce, Worcestershire and bitters -pour over the ingredients in the cooking bag - tie the bag.

  • Step 5: Punch 12 holes on top of the bag with a cooking fork., bake at 350F for 1 1/2 hours or until the chicken comes off the bone.
