Ingredients

The ingredients are:
  • FOR PICKLE
  • 2 tablespoons granulated sugar
  • 3/4 cup white wine vinegar
  • 5 1/2 ounces red onion (3/4 to 1 cup, thinly sliced)
  • Salt
  • Pepper
  • FOR SALAD
  • 100 grams cucumber (1/2 English cucumber, skin on)
  • 32 to 36 ounces melon (balls, 4-5 cups, a combination is pretty - cantaloupe, honeydew and/or watermelon)
  • 2 5/8 ounces feta cheese (crumbled, 1/2 cup)
  • Olive oil
  • Sea salt

How to Make

  • TO MAKE THE PICKLE

  • Step 1: Combine the sugar and vinegar in a heatproof bowl and microwave for one minute and then stir to dissolve the sugar. Pour over the sliced onion and then season with salt and pepper; cover and refrigerate for at least 20 minutes or until ready to use.

  • TO MAKE THE SALAD

  • Step 2: Thinly slice the cucumber lengthwise into ribbons. Drain the pickled onions. Combine the pickled onions, cucumber ribbons, melon balls and feta in a large bowl. Drizzle with olive oil and toss. Sprinkle with flaky sea slat just before serving.
