Ingredients

The ingredients are:
  • 6 large eggs
  • 3/4 cup grated parmesan cheese
  • 1/4 cup mayonnaise (I used Hellmans)
  • 1 tablespoon all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon black pepper
  • 1 can (14 ounce) hearts of palm (drained, chopped or artichoke hearts chopped, 390ml)
  • 1 package (300 grams) chopped spinach (thawed and squeezed)
  • 3 green onions (white & green thinly sliced)
  • 1/3 cup red bell peppers (finely chopped)
  • 3/4 teaspoon chili flakes

How to Make

  • Step 1: Pre-heat oven to 350F

  • Step 2: Whisk together the eggs, parmesan, mayo, flour, dijon & pepper

  • Step 3: Add remaining ingredients and mix well

  • Step 4: Spoon 1 1/2 tbsp of the mixture into each of 36 mini-muffin cups sprayed with cooking oil

  • Step 5: Bake 20 minutes or until a toothpick inserted in centres comes out clean
