Ingredients

The ingredients are:
  • 24 large (1 kilogram) shrimp (peeled green prawns, tails on)
  • 390 grams chorizo sausage (halved lengthways and thickly sliced, 3 sausages)
  • Olive oil, for drizzling
  • FOR MANGO DIPPING SAUCE
  • 200 grams mango (coarsely chopped)
  • 50ml lime juice (1 lime)
  • 1 tablespoon olive oil
  • FOR CORIANDER-LIME DIPPING SAUCE
  • 125 ml olive oil (1/2 cup)
  • 1/3 cup coarsely chopped coriander
  • 1/4 cup coarsely chopped parsley
  • 2 tablespoons red wine vinegar
  • 1 lime, whole (Juice of, or to taste)
  • 1 green chilli (long chilli, coarsely chopped)
  • 1 garlic clove, coarsely chopped
  • Micro coriander, to serve
  • Lemon halves, to serve

How to Make

  • FOR THE MANGO DIPPING SAUCE

  • Step 1: Process ingredients in a food processor to combine and season to taste.

  • FOR THE CORIANDER-LIME DIPPING SAUCE

  • Step 2: Process ingredients in a food processor to combine and season to taste.

  • Step 3: Preheat a barbecue to medium-high.

  • Step 4: Season prawns to taste and thread three prawns onto each skewer, alternating with a slice of chorizo, drizzle with a little oil and then grill, turning occasionally, until cooked through (2-3 minutes).

  • Step 5: Serve hot with green and gold dipping sauces, grilled lemon wedges and micro coriander.
