  • 2 kilograms large shrimp (chilled prawns)
  • FOR GINGER LIME & CHILLI DIPPING SAUCE
  • 2 red chillies (long red)
  • 1 tablespoon grated ginger root
  • 1 lime, whole (juiced)
  • Caster sugar, pinch
  • Coriander, chopped
  • FOR SMOKED CHILLI MAYONNAISE DIPPING SAUCE
  • 1 cup mayonnaise
  • 1 teaspoon paprika (smoked)
  • Cayenne, pinch
  • 1 tablespoon lemon juice
  • FOR ROCKET & HORSERADISH PESTO DIPPING SAUCE
  • 2 cups rocket lettuce (leaves)
  • 1/4 cup toasted pine nuts
  • 1 tablespoon horseradish
  • 1 lemon, whole (juiced)
  • 1/2 cup olive oil (good quality)

How to Make

  • FOR THE GINGER LIME AND CHILLI DIPPING SAUCE

  • Step 1: Deseed and finely chop the red chillies and combine with the grated ginger, the juice of the lime and the caster sugar and finish with some chopped coriader leaves to serve.

  • FOR THE SMOKED CHILLI MAYONNAISE DIPPING SAUCE

  • Step 2: Combine the mayonnaise with the paprika, cayenne and lemon juice.

  • FOR THE ROCKET AND HORSERADISH PESTO DIPPING SAUCE

  • Step 3: Blend rocket leaves with toasted pine nuts, horseradish, the juice of the lemon and good quality olive oil.
