Step 1: Put water in a small heatproof bowl and sprinkle over gelatine and stir well and then aside for 10 minutes.
Step 2: Put the gelatine mixture in the microwave and cook on medium (50%) for 1 minute and then stir in 1 tablespoon of the honey and set aside for 5 minutes to cool slightly.
Step 3: Whisk yoghurt and buttermilk in a medium bowl until well combined and then stir in gelatine mixture.
Step 4: Pour mixture evenly between 4 x 125ml (1/2 cup) dariole moulds.
Step 5: Put on a tray and refrigerate for 4 hours or until set.
Step 6: Dip moulds into hot water to loosen and then turn out on to serving plates and drizzle with remaining honey and serve each with 1/2 a fig.
