Ingredients

The ingredients are:
  • 24 ounces bone-in pork loin chops (4 center cut chops/6ounce)
  • 1/2 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 tablespoon olive oil
  • 1 cup low-sodium tomato juice (divided)
  • 2 teaspoons cornstarch
  • 1/3 cup chicken stock (unsalted)
  • 3/4 teaspoon garlic powder
  • 2 green onions, sliced
  • 1 tablespoon parsley, chopped (fresh)
  • 1 tablespoon butter

How to Make

  • Step 1: Sprinkle pork with 1/4 teaspoon salt and 1/4 teaspoon pepper. Heat oil in a skillet over medium-high.

  • Step 2: Add the pork; cook 5 minutes on each side. Remove from the pan. Keep warm.

  • Step 3: Combine 1/2 cup tomato juice and cornstarch in a small bowl, stirring with a whisk.

  • Step 4: Add the cornstarch mixture, remaining 1/2 cup tomato juice, stock, garlic powder and onions to the pan. Bring to a boil; reduce heat, and simmer 3 minutes.

  • Step 5: Remove the pan from the heat. Stir in 1/4 teaspoon salt, 1/4 teaspoon pepper, parsley, and butter. Serve over the pork chops.
