Ingredients

The ingredients are:
  • 4 large (240 grams) pita breads
  • Green olive dip (2/3 cup, plus extra to serve)
  • 60 grams mixed greens (baby spinach and beetroot leaf salad mix)
  • 1 cup chopped red capsicum (roasted, drained)
  • 1 can (425 gram) oil-packed tuna (drained)
  • 125 gram feta cheese (sliced)
  • 1 tablespoon olive oil
  • Lemon wedges to serve

How to Make

  • Step 1: Preheat a sandwich press.

  • Step 2: For each toastie, place a piece of bread on a clean work surface and spread a quarter each of the olive dip, salad mix, capsicum, tuna and fetta and drizzle with oil and roll up to enclose filling and secure with unwaxed kitchen string and repeat to make 4 in total.

  • Step 3: Cook in sandwich press, in batches, for 4 minutes or until heated and toasted and then cut in half and serve with lemon wedges and extra dip.
